It’s a new year & chances are that you might be focusing on some health & fitness goals. Me too girl! Even my husband is jumping on board which is why I was on a good search for some healthy lunch options.

I’m always on the lookout for healthy lunch or dinner meals that fit my lifestyle. Since I’m still on my journey to lose the baby weight & a HUGE believer in balance, I found these turkey taco bowls that I felt would hit every aspect I was looking for. Not to mention that my husband has a thing for tacos, and they are DELICIOUS! I’ll definitely be sharing this with my Fit Mamas Facebook group. Have you joined us yet? If you didn’t know, one of the biggest secrets to success when it comes to healthy eating is meal planning/prep! I like to take the time each week to come up with a weekly meal plan. If you need some great ideas, check out some of my healthy eating boards such as snack ideas on Pinterest! Make your list & then hit the grocery store. If you are a stay at home mom like me, you might not need to do complete meal prep since your meals will mostly be eaten at home. But you can however do some prep work to make your mom life easier such as cutting up veggies or cooking some turkey or rice in big batches that you can use throughout your week. I need to fully prep my husband’s lunches since he will be eating them at work. (bonus wifey points) I like these meal containers, it’s always nice to have the 2 compartments.

Like I said these turkey taco bowls are delicious & one of the great things about them is that they are totally customizable! You can lay out different toppings for everyone to choose their own style. I do want to note that to make a quicker option, you could add a packet of low sodium taco seasoning to your turkey & call it a day.

Prep Time: 15 mins, Cook Time: 20 mins, Servings: 8 bowls

Ingredients

  • 1.25 lbs ground turkey
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon paprika
  • 1/4 cup all-purpose flour
  • 1 can (14.5 oz) beef broth
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) black beans drained & rinsed
  • 1 cup frozen corn
  • Cooked rice
  • Taco toppings; shredded lettuce, pico de gallo, salsa, avocado, olives, lime, shredded cheese, etc

Instructions

  1. In a large nonstick skillet, over medium high heat, cook the ground turkey with the salt & pepper until cooked through and no longer pink, breaking the meat into small pieces as it cooks. Drain.
  2. Add the cumin, garlic powder, chili powder, onion powder, oregano, paprika, and flour. Stir the mixture constantly for 1 minute while it cooks. It will be crumbly (that’s ok).
  3. Slowly add the beef broth, a little bit at a time, while whisking to let it thicken up. Add in tomato sauce and stir to combine.
  4. Bring to a boil. Once boiling add the black beans and corn.
  5. Turn heat to medium and let simmer for 15-20 minutes or until thickened.
  6. Serve with rice and taco toppings for delicious burrito bowls.

Recipe Notes

“It’s easiest if you combine the spices and the flour into a small bowl. That way when you are ready for it you can just dump all at once and then stir. To make this a quick, 30 minute meal. Prepare and chop your toppings while the meat mixture simmers. Put the rice in the rice cooker or on the stove top first thing. You want to make sure you are simmering the meat mixture for at least 15 minutes. It will seem like too much liquid at first but as it simmers on the stove the flavor develops and it will thicken up. I usually end up simmering mine for closer to 20-25 minutes to get the consistency I want.”

Ok, I’m off to go complete my ab workout for the day. I’m really loving my group’s ab challenge this month as I’m working to rebuild my core strength post baby. I can feel the improvements in the passing month & I love that so many other woman have joined in! What better way to reach your goals than with other encouraging women supporting you & cheering you along the way! Fitness has a way of bringing women together. I only hope it brings others as much peace & happiness as it does for me.
