Glazed Strawberry Bread

It’s been a minute since I’ve posted a recipe! Since it’s no secret that I’m really into anything strawberry or pastry related I figured this was a recipe I HAD to share! Pinterest really is the best isn’t it?

I’ve really been cleaning & organizing things lately (nesting perhaps?) & the cabinet above the microwave was tackled over the weekend. I was looking for a recipe & got so overwhelmed by the messiness & lack of organization. I’m talking years worth of magazine & newspaper cut outs, print outs from websites, hand written recipes…..ugh. With Pinterest & the internet is there really a reason to keep those things anymore? Every recipe you can possibly imagine is just a few clicks away. I kept my hand written ones (ya know the really good family ones passed down) & any of my fave print outs because I just like having a paper in front of me but I tossed all the others & IT FELT SO GOOD! I’m not a collector, at all. I love getting rid of stuff. I did NOT inherit that trait from my mother (sorry Mom!)

Besides all my family classics, my go-to is always Pinterest & it suprisingly usually doesn’t fail me. I save all my favorites & post what I’ve tried & make notes on how I’d make it better next time. This strawberry bread did not disspaoint! Have you ever tried the popular Povitica bread? Well move over Povitica because I was told this was as good if not BETTER THAN POVITICA! I wish I could take the credit. I don’t make this stuff up, I just read, bake & eat!! (then share with you all)


Strawberry Bread

Ingredients
For the Bread:
  • 3/4 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup oil
  • 1 large egg
  • 1 teaspoon vanilla extract or almond extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • cups diced strawberries
  • 2 tablespoons all-purpose flour
For the Glaze:
  • 2 cups powdered sugar
  • 2 tablespoons melted butter
  • 1/3 cup finely diced strawberries
  • 1/2 teaspoon vanilla extract or almond extract
  • 1-2 tablespoons heavy cream or milk** (optional)
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a medium bowl, stir together the sugar, milk, oil, egg and vanilla. In a separate bowl, combine the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and stir until just combined.
  3. In a small bowl, toss together the strawberries and the 2 tablespoons of flour to coat the strawberries. Fold the floured strawberries gently into the batter.
  4. Pour the bread batter into a greased 9″x 5″ bread pan. Bake at 350 degrees for 50-55 minutes. A toothpick inserted in the center of the bread should come out clean. Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely.
  5. To make the glaze, combine the powdered sugar, melted butter, diced strawberries and extract in a small bowl. Mix until it is smooth.
  6. Once the bread is cool, spread the glaze on top of the bread. Slice and serve.
Recipe Notes

*I often add an extra teaspoon of vanilla or almond extract to the bread batter (along with the wet ingredients) for an extra boost of flavor. I do this especially if I’m not putting the glaze on top. The bread has the most flavor when you add the strawberry glaze!

*We have added up to 2 1/2 cups of diced strawberries to the batter. The bread stays together the best when you use about 2 cups.


I followed this recipe exact & it was SO DELICIOUS! It was even better the next few days after all that gooey glaze soaked into the bread. (I stored it in the fridge). I used fresh strawberries & I did use a little almond extract because I LOVE almond extract in baking. It hit all my pregnancy cravings!
